Description

Warm, cinnamon-spiced apple fritters with a light lemon glaze — the perfect baked treat for cozy mornings.

Ingredients

Scale
  • For the Fritters
  • 2 medium firm apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • ½ cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Glaze
  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 12 teaspoons water (adjust for consistency)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prep the apples by peeling, coring, and dicing them into small cubes. Set aside.
  3. Mix dry ingredients in a large bowl: flour, baking powder, cinnamon, nutmeg, and sugar.
  4. Combine wet ingredients (milk, egg, vanilla) in a separate bowl. Gradually pour into the dry mixture and stir gently.
  5. Fold in apples until evenly coated with batter — it should be thick but spoonable.
  6. Scoop batter onto the baking sheet in rustic mounds, spacing them about 2 inches apart.
  7. Bake for 18–22 minutes, until golden brown and cooked through.
  8. Prepare the glaze: whisk powdered sugar, lemon juice, and water until smooth.
  9. Glaze the fritters while warm. Let them set for 5–10 minutes, then serve with coffee or tea.

Notes

  •  Use a mix of apple types (tart and sweet) for the best flavor balance.
  •  Don’t overmix the batter — light stirring keeps fritters fluffy.
  •  If baking in batches, keep the first batch warm in a low oven.
  • Store unglazed fritters in an airtight container for up to 2 days.
  •  For extra flavor, add a pinch of lemon zest to the glaze.
