Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- Prep the apples by peeling, coring, and dicing them into small cubes. Set aside.
- Mix dry ingredients in a large bowl: flour, baking powder, cinnamon, nutmeg, and sugar.
- Combine wet ingredients (milk, egg, vanilla) in a separate bowl. Gradually pour into the dry mixture and stir gently.
- Fold in apples until evenly coated with batter — it should be thick but spoonable.
- Scoop batter onto the baking sheet in rustic mounds, spacing them about 2 inches apart.
- Bake for 18–22 minutes, until golden brown and cooked through.
- Prepare the glaze: whisk powdered sugar, lemon juice, and water until smooth.
- Glaze the fritters while warm. Let them set for 5–10 minutes, then serve with coffee or tea.
