  • 2 teaspoons light olive oil
  • 1 ½ cups diced cooked chicken (rotisserie chicken works great)
  • ½ cup Buffalo wing sauce
  • 1 cup shredded mozzarella cheese
  • ⅓ cup creamy blue cheese dressing
  • ⅓ cup sliced green onions

Instructions

  • Prep: Preheat oven to 400°F (200°C). Place flatbreads on a large baking sheet.
  • Pre-Bake Crust: Brush the tops of the flatbreads with olive oil. Bake for 5 minutes until lightly crisped.
  • Mix Topping: In a medium bowl, toss the diced cooked chicken with the Buffalo wing sauce until evenly coated.
  • Assemble: Remove the flatbreads from the oven. Spread the Buffalo chicken mixture evenly over each flatbread. Sprinkle the shredded mozzarella cheese on top.
  • Bake: Return the flatbreads to the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly and the crust is golden.
  • Finish & Serve: Remove from the oven. Drizzle with blue cheese dressing and sprinkle with sliced green onions. Slice and serve immediately.
