Description

  • For the Ground Beef:
  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 1 lb lean ground beef (93/7)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • For the Bowls:
  • 1 cup cottage cheese
  • 1 avocado, sliced
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

  • Roast Sweet Potatoes: Preheat oven to 425°F (220°C). On a baking sheet, toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 20-25 minutes, flipping once, until tender and crispy.
  • Cook Beef: While potatoes roast, heat olive oil in a large skillet over medium heat. Sauté the diced onion until soft, about 5-7 minutes. Add ground beef and cook until browned, breaking it apart. Drain any fat.
  • Season Beef: Stir in the taco seasoning and cook for 1 minute. Turn off the heat and stir in the hot honey until the beef is fully coated.
  • Assemble Bowls: Divide the roasted sweet potatoes among four bowls. Top with the hot honey ground beef, a scoop of cottage cheese, and sliced avocado. Garnish with fresh cilantro if desired.
