Description
A spooky yet savory Halloween appetizer featuring mozzarella, olives, and salami for a fun, eerie party bite.
Ingredients
→ For the Eyeballs
-
12 Fresh Mozzarella Balls (Bocconcini) — small, bite-sized pieces
-
12 Slices of Salami — thinly sliced, large enough to wrap
-
6 Green or Black Olives — halved, for “pupils”
-
1 tbsp Tomato Paste or Red Food Gel — to mimic bloodshot veins
-
Fresh Herbs (optional) — for garnish
→ For Serving
-
Crackers or Crostini — optional base for serving
-
Small Skewers or Toothpicks — to hold everything together
Instructions
-
Prepare the mozzarella: Pat dry the mozzarella balls with a paper towel to remove excess moisture.
-
Wrap with salami: Lay out a slice of salami and place a mozzarella ball in the center. Fold or roll the salami around it to resemble an “eyeball.”
-
Add the pupils: Press an olive half on top of each mozzarella ball — cut side down — to look like a pupil.
-
Create the veins: Use a small brush or toothpick to streak tomato paste or red food gel around the mozzarella for a spooky, bloodshot look.
-
Assemble and serve: Secure each with a toothpick, place on a platter or atop crackers, and serve immediately or refrigerate until party time.
Notes
-
Use pepperoni or prosciutto instead of salami for different flavor twists.
-
For vegetarian guests, skip the salami and wrap with roasted red peppers.
-
Chill for 30 minutes before serving to enhance flavor.
-
Great addition to Halloween charcuterie boards.
-
Best enjoyed fresh — the “eyeball” look holds up for several hours.
